Guacamole Salad

Wednesday Workout: 20 minute yoga, abs
Yesterday I had meeting/stuff all day with the rest of my music department at school and I have another day of meeting-ish stuff today.  It is nice seeing the other teachers and being in the air conditioning!! It was almost 100 yesterday and is supposed to be 100 today and tomorrow! Crazy! After watching Barefoot Contessa on Food Network on Tuesday (she’s my favorite) I wanted to make her Guacamole Salad for dinner.  I went to the grocery store after school and braved the heat for a yellow pepper, red onion, avocado, black beans and grape tomatoes.

 

Ina’s Guacamole Salad

 

Ingredients

  • 1 pint grape tomatoes, halved
  • 1 yellow bell pepper, seeded and 1/2-inch diced
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1/2 cup small diced red onion
  • 2 tablespoons minced jalapeno peppers, seeded (2 peppers)
  • 1/2 teaspoon freshly grated lime zest
  • 1/4 cup freshly squeezed lime juice (2 limes)
  • 1/4 cup good olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon ground cayenne pepper
  • 2 ripe Hass avocados, seeded, peeled, and 1/2-inch diced

Directions

Place the tomatoes, yellow pepper, black beans, red onion, jalapeno peppers, and lime zest in a large bowl. Whisk together the lime juice, olive oil, salt, black pepper, garlic, and cayenne pepper and pour over the vegetables. Toss well.

Just before you’re ready to serve the salad, fold the avocados into the salad. Check the seasoning and serve at room temperature.

 

My salad! It was SO good and really easy. I will definitely make this again and maybe add corn and another kind of pepper to the next one! I also made Ina style shrimp by throwing them on a baking sheet and drizzling with olive oil, salt and pepper and in 400 degrees for 6-8 minutes. Seriously easy and always perfect.

After dinner and my Kombucha :) I did some abs and yoga in front of the TV (Yankees game!) to get a workout in because I did not feel like getting on the treadmill or going outside in 95 degree heat.

I followed something very similar to this for my TV yoga session and added in some warrior poses. I love how they open up my hips and stretch me out. I’m a little sore from Pump Tuesday night because I only did it once the week before! I’m looking forward to going to the new release again this Saturday :)

Oh yeah, I’ve been eating my overnight oats for breakfast the past few days! They fill me up SO much and I bought  different type of organic quick oats yesterday to try out soon. The oats in this picture are 1/4 cup = 150 calories (which I think is great). The new ones are 1/2 cup = 150 calories! I can’t imagine eating 1/2 a cup of oats because I’m always stuffed!

Phillies Game!

Yesterday, I got to go to Philadelphia with my parents and Colby for a Phillies game! My Mom and Colby are big Phillies fans and were very excited for the game.  Dad and I enjoyed ourselves even though I looked up Yankees tickets to buy for us in August :)

We ate lunch at McFadden’s, a restaurant that connects to the stadium. Since I was in Philly I had to have…

Philly (Chicken) Cheesesteak. It was seriously good and came with waffle fries.

Colby got a free hat today! Free hats for guys for the Father’s Day game.

Confession…

I’m really freaked out by mascots and people in animal/character costumes.  This fear all started with one guy when I was like 1 year old…

The Philly Phanatic

Yes, he is cute but he scares me. He made me cry hysterically when I was little because he came up to me and stuck his big green nose in my face.  I tell my Mom that he scarred me for life.

I found it!! My first encounter with the Philly Phanatic that scarred me for life! Look at the fear on my 1 year old face.  Perhaps this is why I can’t help myself from loving the Yankees?

Running Playlists

Good morning!! I am up bright and early today and I’m not even going for a run!  My parents, the BF and I are going to a Phillies game today and I might try to squeeze a little yoga workout in before we go to the game.  I am definitely feeling yesterday’s BodyPump class because I increased my weight on almost all of the reps.  I was feeling confident and told myself I would change the weight if I could tell it was too much.  I have the “good sore” today where I can tell I did something good for my body yesterday, but I can still move!  I’m hoping a quick yoga session will loosen me up!

I think the YogaDownload 20 minute “Yoga for Runners #1″ is great and always loosens up my legs and hips.  I often look at the “pose guide” and just go through the poses on my own instead of listening to the audio if I’m in a rush.  I love the pose guides that YogaDownload has because it helps me understand each practice so much better, especially if it is an audio only session.

 

Running with Music…

As a music teacher, you might think that I run with music all the time.  When I first started running, I always had to have my iPod Nano.  Part of that was because I used the Nike+ and I had to have my iPod Nano to record my runs.  Later, I moved on to my beautiful Garmin 405 and bought a smaller iPod Shuffle so I could get rid of the arm band.  Since I’ve gotten the Garmin, I have been able to do runs under an hour without music.  If I am outside and running a shorter distance of 6 or less miles, I can usually stand running without music.  During my marathon training this Spring, I ran after school most of the time.  After hours of listening to screeching instruments all day (I exaggerate, my students are perfect of course…) I could use the silence for my shorter Tuesday/Thursday 5 or less mile runs.  I found it therapeutic to hear my breathing and the sound my feet made on the pavement :)  However, if I am on the treadmill I HAVE to have TV or music.  Yesterday I had my iPod on when I ran 5 on the treadmill at the gym.

Since it has been crazy hot already this Summer, I thought I should update my playlists and create a new “5 Mile Run” playlist…


None of these songs are new to me because they have been on my massive “running” playlist that contains 8 and 1/2 hours of music.  Most times, I never get to these songs because my iPod has so much music on it and I leave it on the random shuffle mode.  This will be great for the treadmill after BodyPump class! As you can see, some of the songs are from Kara Goucher’s Endurance Boost. This is actually a great album because you can listen to the tracks separately without Kara’s voice, or you can listen to it with her speaking.  The workout is really great because it is intervals of 4 minutes all out and 4 minutes recovery.  When I first got this almost 2 years ago, I could NEVER run during the recovery and would have to walk.  Now, I can actually do this workout how it was intended.  I should do this one again to work on speed!

If you are looking for new music, make sure to look at: Jog.fm. This website has you enter your mile/min. pace and finds music that has the same beats per minute (bpm).  If you put in a faster pace, sometimes it has slower songs that your feet would run double time to the beat.  I usually look for ones that are in the 150’s to fit a pace in the 9:00-9:45 range.

Wedding and Sushi

This afternoon I performed in a string quartet for a wedding. When we got there, it was raining and water and wooden instruments do not mix well! Luckily, they took a chance and had it outside because the rain stopped and it was very comfortable.

After the wedding ceremony, I was starving and immediately called Colby.  I wanted sushi, and I wanted lots of it!

My sushi rolls are the top and bottom row. Colby had the two middle rows and lots of avocado :)

Yum! My arms are deceivingly super skinny in this picture. I promise they aren’t and they are in the process of getting a little muscle on them this summer!

My friend from college, Matt, is in town for a different wedding tonight and he had his friend Courtney are staying over!  Colby and I are watching the Phillies/Pirates game and waiting for Matt to call so we can pick them up! My family lovesss baseball, but we are slightly divided… Colby and my mom love the Phillies (my mom’s family is from Philly) and my Dad and I <3 the Yankees :)

Not sure if I will run tomorrow morning or take a BODYPUMP class… My legs are STILL sore from the Thursday class! If they are tomorrow, I might wait another day or two.
