Thanksgiving Break

I am so thankful for this Thanksgiving break!!  The Tangled gif above is how happy I was to be home for a few days :)  I spent time with family, exercised my butt off and relaxed!  Colby and I have been trying to get our Christmas shopping done and we are almost there!  To help his Mom out for Thanksgiving, I made Ina’s Smashed Sweet Potatoes and substituted almond milk for the heavy cream and Earth Balance for the butter.  I roasted the potatoes the day before and mashed them with a potato masher.  Even though it takes over an hour to roast the sweet potatoes, the rest is so easy and they taste amazing.

I also made the Tone It Up Green Bean Casserole to take for dinner.  I like this recipe because it doesn’t use cream of mushroom soup (not so nice for my lactose-hating stomach).  I did a few changes… I blended more of the mushrooms with the liquid and added a little corn starch to get it thicker.  I also added some panko to the top and put the casserole under the broiler at the very end for about a minute to get it crispy.  Very good, but the leftovers got a little liquid-y.  More about TIU in another post…

I was an exercise machine this past week because I had no excuses!!

Sunday: 45 min bike, 1 mile walk on TM, abs and lots of stretching - ate a HUGE brunch with family, came home and took a food nap then woke up and did this and burned 502 calories :)

Not much running going on, but it is SO COLD!!!!! I am waiting on new Under Armour tights to come in the mail because my old ones are completely ripped and my others are a different brand and not warm enough.  I had a gift card from Under Armour to buy these tights and I got it last year when I emailed them angry about them always ripping.  They are so expensive, they should last!! I take good care of them!  I was annoyed with them for awhile, so I didn’t order the new ones but I did the other day.  My legs are cold trying to run outside and these were practically free so I went for it.

Also, I’m obsessed with my new bike and I haven’t even been outside with it yet!! I have it on Colby’s bike trainer in the basement.  Here are my legs spinning away Thanksgiving morning watching the parade.  It was awesome!! I feel like I have a new piece of cardio equipment in our home gym and I am so excited for warmer weather in the spring so I can ride outside!  I love it, I love it, I love it!  After riding 4x this week and getting up to 45 minutes, I was sore last night.  I’m going to take a break from it today but I really want to ride it!

I have another post ready to go for tomorrow about my love for the Tone It Up girls :)  Maybe I’ll be able to post more than once a month for December!! I go back to school tomorrow and start up my concert season.  I have lots of dress rehearsals, concerts and assemblies for my music students this month.  Looking forward to the holidays!

Early Christmas Present!!

Hi everyone!! I had to take even more of a blogging break this past month, but I have been working out a lot! I got my BODYPUMP 88 kit in the mail this week and I have been loving the music!  You can find the tracklist here.  I taught twice this week and I couldn’t love it more.  I look forward to teaching pump at night so much.  It is such a stress reliever (which I really need lately!!!) and I just couldn’t be more obsessed right now!  My goal is to pick it up on CXWORX and do it 2x a week.  I really think I want to get certified to teach it in the spring, but I can’t imagine talking through it right now.  It is an intense 30 minute workout!

I have been doing workouts that make me happy and relieve my stress from work.  Running isn’t always that exercise.  I posted last month that I was going to run the Nittany Valley Half Marathon on December 8, but that just isn’t going to happen.   I missed a long run and couldn’t get myself to do all the mid-week runs I should do.  After crying over the thought of running 9 miles outside, Colby told me to just not do the race and to not worry about it.  That made me feel so much better because it was just one more thing to worry about.  I just can’t get myself to run on my own during the week.  I’m just too tired.  I have been enjoying meeting my buddy Amy at the park and running with her.  It just makes it so much easier and I love having someone to talk to when I run.  That is actually where I am about to go right now… we have 4 miles planned for today.  But first I have to show you my early Christmas present from Colby!!

We picked it up at the bike shop last night!!!!

Colby put my new bike on his trainer last night and I got on it.  I guess I won’t have anything to open Christmas morning, but I can ride my pretty new bike!  It is a Jamis Allegro Comp and it is a sort of hybrid bike.  It is more like a road bike, but with upright handlebars.  The tires are a little thicker then road ones and have a little tread so I can go on the rail trail.  I could always switch them out for road tires if I want to for a race. Isn’t she pretty???

I hope old Purple isn’t too jealous!!

Amy and I went for a 10 mile bike ride this morning :)  We just got back from a trip to Lake Placid, NY (more on that later) and we got back late last night.  Since she is battling a foot injury, running with my favorite partner hasn’t been happening.  Maybe riding our bikes will be our new thing???

We both rode our little girl purple mountain bikes and she rode from her house to mine (about 5 miles).  Then we rode to her house together and I turned around and went back home to finish at 10 for the day.

I forgot to add on a rode on the way back, so it was a little less.  We talked when we rode together and when I turned around I decided to try to push my pace.  I was happy to see I almost averaged 14 mph.  Maybe it is time to update my bike!

Ironman 70.3 Eagleman

On Sunday, Colby and I drove to Cambridge, MD for his half Ironman called the Eagleman.  Colby loves triathlons and has done a full Ironman (Lake Placid 2010).  The Eagleman 70.3 consists of: 1.2 mile swim, 56 mile bike and 13.1 run.  He started training around January for this race and has been consistent with his training.  Good thing I like to workout and trained for a half-marathon this past spring, because he was always working out in the morning and evening.

We checked into our hotel Saturday morning, and drove to the expo in the afternoon.  We didn’t know, but Andy Potts was there for a meet and greet!  He is a pro triathlete and won the race on Sunday.

After the expo, the boys had to get their bikes into the transition area.  Amy‘s husband Matt raced too so I was super lucky to have Amy with me all weekend to walk around and worry with while the guys raced!

There was a lot of rain leading up to the race, so it was crazy muddy!  I got a ride around so I didn’t have to mess up my TOMS :)

On Sunday, we got to the race very early.  Matt’s swim wave was at 8:00 and Colby’s was at 8:30.  Colby was worried that he was the second to last swim wave because we knew it was going to get hot later in the day.

At the finish line!  You can see Amy cheering Colby on in the Tiffany blue/green shirt… she bought it for the Nike Half and thought it was too green! :)  I wanted to make sure to get a good picture of him at the finish, so he didn’t really see me until I took the picture.

As you can see, he had a GREAT race!! His goal was 5 hours and he was thrilled to go under 5!  I checked my phone compulsively during the race, but some of the half way marks didn’t show up.  He was so fast on his bike, I missed him at transition 2!  The weather did get really hot and sunny later in the day.  He said the run was really difficult because of the heat.  He was a little sore after the race, but was able to run 3 miles with me yesterday morning.  I can’t believe how his legs are in such great shape!  He was curious as to why his swim time was a few minutes slower than expected, but after looking up the pro’s times, they were slower too.  He thought it must have been a little longer than 1.2. Oh well, he still went under 5 hours!

At dinner that night… he has given up drinking soda since January so he was very happy to have cherry coke Sunday night!  He deserved it :)
