Disney World Vacation!
Last week, Colby and I got back from the happiest place on earth! We spent 8 days at their Coronado Springs Resort and it was wonderful! We had park-hopper tickets so we went to multiple parks a day. We usually started at one park and when it would get really hot and crowded after lunch we would head back to our resort’s pool. We would go back to another park in the evening, usually close to our dinner reservations. Here are the places we had dinner…
- Coral Reef Restaurant (Epcot)
- Narcoossee’s (Grand Floridian Resort near Magic Kingdom) (worth 2 meals for meal plan)
- Fulton’s Crab House (Downtown Disney) (worth 2 meals)
- Maya Grill (Coronado Springs Resort)
- Chefs de France (Epcot)
- Cape May Cafe (Yacht and Beach Resort near Epcot)
We planed this trip in the winter and decided to try out one of the meal plans. It was nice to pay ahead of time for your meals. Our meal plan included one sit down meal (our dinner), one quick meal (walk up, quick service-type meal … we always used it as lunch) and a snack (fruit, water, ice cream, etc.)
I was nervous about the meal plan because I wasn’t sure I could eat that much. I know Disney has large portions and the sit down and quick meal both came with dessert. I also wore my Garmin the last few days and the one day we got up to 9 miles walking!! Most days we did 5-7 miles a day and that was with me pausing my Garmin when we went inside buildings and I lost satellite reception.
I brought granola bars with us for breakfast and sometimes bought a banana too. We had a coffee maker in our room and we also got refillable resort mugs that we could use to fill up coffee in the main lobby.
For lunch, we used our quick meal, where you usually walked up to a counter to get your food and seat yourself. I tried to go for the healthiest option for each lunch. I knew dinner would be huge so I looked for salads and other healthy options. Luckily, Disney has really gotten vegetarian/vegan friendly and there are always healthier options available. These meals are usually around $10-15 plate + drink (water!) + dessert (I always substituted my dessert for another bottle of water!) Some of our favorite quick meal services were…
- Flame Tree Barbecue (Animal Kingdom) … Colby was so happy to get ribs and I had an awesome turkey sandwich that came with fruit
- Be Our Guest (Magic Kingdom)… this restaurant is in the new Fantasyland and it is impossible to get dinner reservations. The lunch was great (I had a quinoa salad) and the restaurant is beautiful!
- Tamu Tamu (Animal Kingdom) … I had an awesome quinoa salad with feta, olives, tomatos and tofu.
- Sunshine Seasons (Epcot – Land Pavilion) … lots of good options
My favorite animal on our safari ride in Animal Kingdom! We had a great ride with tons of animals close to us.

We really liked Animal Kingdom a lot. I had been there before, but I enjoyed it more this time. Even though it is hot, there are lots of shaded areas. Believe it or not, this was Colby’s first Disney trip to see all the parks! (We ran the Wine and Dine 1/2 Marathon in 2010, but we didn’t get to see everything)
Even though it doesn’t really match that dress, I got that side bag at Target and it was so comfortable to wear around each day.

I was obsessed with the little Tangled tower that is fairly new. I wish it was a ride!!
My favorite place in Disney is France in Epcot.
